What's For Dinner? February Week 1

I'm slacking on the pictures for these posts lately. Hope ya'll don't mind. I still take some but these posts are much faster to write when they're simply in quick list format like I did when I first started doing them. Occasionally, I'll put the bigger effort forth and give you lots of pictures. But this one is fairly brief again.
(P.S. Sarah - thank you for all the great ideas last week! Was that all one week for you? Wow, girl! Way to go - that's a lotta' cookin'! I have got to make your lemon asparagus pasta again soon - love it!)

On the menu this week:
-Crunchy Baked Chicken Cutlets from Family Fun mag. These are so easy and shockingly good. I didn't do the sweet autumn chicken recipe this time. Instead, I just made a honey mustard dipping sauce for Craig and I and served it with steamed broccoli and cauliflower and some fresh fruit. The kids were happy to dip the chicken in applesauce instead.
-Turkey and cheese roll-ups for lunch one day last weekend. For mine and Craig's, I smeared some good Dijon mustard on a whole wheat tortilla and rolled up smoked turkey and provolone. For the kids, I sprinkled some mild cheddar and topped with turkey. I also popped the kids roll-ups in the microwave to melt the cheese and help them stick together.
-Hot dogs. I'm so embarrassed. Craig has been begging and Will jumped on that bandwagon. It's very rare, but I caved. I tried to buy the ones that said no fillers and were just all pork without mixing random parts of random animals. Gross. And seriously, what is it about hot dogs that is so appealing to kids? Do they just love the texture or the salty flavor? Anyway, it's done. We had fruit and veggie on the side and everyone enjoyed it. That's the point of family meal times right? It is what it is.
-Yogurt pancakes with dried blueberries and chopped almonds for our snow day breakfast on Wednesday.
-Favorite white bean dip with pita chips, raw veggies, fruit and sliced cheese. The kids also had avocado smoothies with this lunch on our snow day.
-Tomato Bisque with grilled cheese and grapes. The recipe is somewhere back on my blog...
-Big salads with leftover chicken strips.
-"Disappearing Zucchini Orzo" - recipe from a book I recently finished called Animal, Vegetable, Miracle by Barbara Kingsolver. Grated zucchini, chopped onion and a little garlic tossed with cooked orzo pasta. This is soooo good! And it will be a great way to use up the monumental bounty of zucchini that comes at the end of every summer. It's pretty versatile but I used the herbs it suggested and a combination of 1/4 cup Parmesan and 1/4 cup sharp cheddar. Craig even liked it okay. I served it with grapes and bread and butter with a smear of apricot preserves.
Yumm. I think that's it. I might make taco salads for dinner tonight if we don't eat tomato soup leftovers. LOVE that tomato soup recipe!

Just an idea...but we do eat all-beef hot dogs. I am not a fan of regular hot dogs, but the ones Al gets processed are quite good. The almost taste more like a sausage, and have to be better for you than the traditional hot dogs. If you are interested, we do sell boxes of them. The are $20 for a box that has 36 dogs in it. (It is the compromise in this household... just trying to keep the guys happy :)

My kids love hotdogs.. so does chris and admittedly I do too sometimes. So... we eat them :)

No-the ideas were just ideas I had come up with (now I can't even remember what I gave you) and now I'll just go to the store for some of the staples.. I still have more than half of my ideas i made up last week ready for this week.

And... tonight... i'll get you those recipes I owe you.

PS-I made that tomato bisque a few weeks back-loved it! But do you make the whole batch? or freeze some? We had it coming out our ears!
