It's dinner time!
What are we having???
Doesn't it look like she's saying "sous chef" in this picture?
Her specialty is whining at my legs until I give her something to snack on while I cook. Above, she's munching raw green beans and telling me how long to cook her grilled cheese.
On the menu this week:
1. Saturday:
leftover chicken salad from last week for lunch.
And for dinner: scrounging a meal together for the kids (scrambled egg for Sophie and English muffin pizza for Will) while Craig and I went out for dinner.
2. Sunday:
I've been in the mood for my mom's "summer tuna cakes" for awhile now. They have shredded zucchini and Dijon mustard in them and I just grilled them on the panini grill before serving them open face on whole wheat toast with lettuce, tomato and sliced cheddar. Yum! To go with: asparagus and red pepper "salad" with homemade dressing (also mom's recipe). The dressing is olive oil, lemon juice, balsamic vinegar, fresh thyme, etc. The vegetables are just steamed to crisp/tender and the dressing is drizzled over top - soooo tasty! And I served a couple crunchy vegetables on the side of this meal too.

I was so pleased to see that the thyme that I purchased at the farmers market a couple weeks (?) ago was still fresh and ready to go. I store fresh herbs like this wrapped in a lightly damp paper towel inside a plastic bag and they keep very nicely.
3. Monday:
3. Monday:burgers on the grill with more fresh guacamole to serve on top. I think that's my favorite way to serve burgers now. We had watermelon and raw veggies on the side.
4. Tuesday:
The kids had an early dinner of leftovers. Then I went for a run and Craig ordered us pizza later after I got back and showered. He'd been begging for Vito's for days. But after a long run, I didn't have much appetite for heavy pizza. Plus we ate pretty late. :(
5. Wednesday:
black bean-tomato soup with cilantro lime cream. A yummy cooking light recipe that's mostly for ME. I served it with grilled cheese and grapes.

6. Thursday:grilled chicken breasts with avocado, tomato, and cucumber salsa. Served with fresh melon and some cheese slices. I hadn't added the avocado yet in this picture:

Mmm! This is probably my favorite salsa ever to serve over grilled meat.
7. Friday:
leftovers!
What's on your menu? I'd love to hear!
Happy eating!
