What's For Dinner? October Week 1

On the menu this... err... last week:
1. Saturday morning pancake ritual... this time with the yogurt pancakes my friend Kelly suggested. Double yum! Thanks for the link, Kelly! I actually used dried blueberries ('cause that's what I had on hand), slivered almonds and a little almond extract. Oh, and I used plain, whole milk yogurt. P.S. - these are super good on-the-go breakfasts just warmed up plain before work.
In the evening, I had a little dinner party with friends. I was in the mood for a fall feast and wanted to warm up my new dining room with a gathering. I even set out my chargers and linen napkins.
I don't have pictures of the meal, but I served: chicken bacon roulades, steamed green beans, pumpkin walnut biscuits, and my mom's French apple cake. The roulades are a recipe from my friend Leah and they are chicken breasts pounded thin and rolled up with cooked bacon, sliced shallots and Parmesan cheese, then topped with a rich gravy. And the biscuits are so sweet and yummy, they would be good enough to eat for breakfast with some honey.
2. Sunday was my brothers' birthday dinner and my mom made fajitas.
3. Monday - butternut squash soup with leftover pumpkin walnut biscuits. There are potatoes and leeks in this soup, so it almost tastes like a potato soup too. Leeks are like giant green onions. You can see them chopped up on the right - they're light green.
The stalks are very long and dark green. You only use the light green/white part and it's good to soak them in water before chopping to help rinse out any dirt.
Creamy, delicious goodness.
4. Tuesday - chicken and asparagus pasta (recipe courtesy of my friend Sarah - thanks, Sarah!), served with some fresh fruit and bread. I think I've posted this recipe here before... I'll have to look back and link it 'cause I don't have time to type it again right now. But it's so tasty!

5. Wednesday we went to a special banquet dinner with Craig's family for a chicken barbecue.
6. Thursday was leftover - we have plenty!!! In fact I was giving portions of food away.
7. Friday, we took dinner over to my sister's family at their new house. They're in the process of moving in and I wanted to give them a housewarming meal, but it ended up being a little overwhelming because of four littles and two cable guys cramping our style. ;) We'll do it again soon when they're feeling a little more settled. I made a new spaghetti with bolognese sauce (a.k.a meat sauce), roasted a whole head of cauliflower pieces in the oven with a simple olive oil and sea salt and a loaf of garlic bread.
More dinner parties and gatherings to come, showcasing fall flavors. I'm on a cooking and baking rampage!
Happy eating!
