{Week of May 12-18}
Pretty sure our weekend consisted of leftovers on the 12th & 13th except for our Mother's Day lunch at my grandparent's house.
On Monday, Soph and I prepped dinner after work while the boys went to karate. We made Weelicious Sloppy Joes. I chopped the vegetables... she stirred them in the pot. Sophie was very good about touching only the handle of the pot and nothing else. She really enjoys helping me in the kitchen and whenever it involves chopping vegetables, she always wants to sample them (even if it's something she typically refuses when it's on her plate) and ends up eating probably a whole serving before we sit down at the table. This night, it was red pepper, carrots and celery. I love this recipe for sloppy joes. It's so simple and healthy and flavorful without having a million ingredients. I have been using ground beef though instead of turkey. Just personal preference as Craig likes that better.
We like to put a slice of cheese on our sloppy joes.
Craig's been helping a friend build a shed in his backyard recently so he's been absent for dinner a couple times a week while he does that side job after work.
Love this.
We also grilled hot dogs for an easy meal late in the week.
And because I have a sweet tooth: chocolate fruit and nut bars with cookie crust, apricot jam, chopped pecans and dark chocolate chips.
