What's For Dinner? May Week 5

{Week of May 26 - June 1}
New waffle alert!  We tried Banana Quinoa Waffles on Saturday morning and they were very good!  I'm sure you've heard of quinoa (pronounced "keen-wa") by now, right?  The "supergrain" or "mother grain" that seems to be more and more popular lately?  It truly is all that it claims to be - the mother of all health foods:  a balanced amino acid source of high quality protein, excellent source of iron, and a low glycemic index.  If you haven't already, you really should try it.  There are a ton of recipes available and millions of ways of serving it.  This recipe came from Parents magazine - June 2012 issue with Michelle Obama on the cover.  I can't share a link because I'm not registered online with them, but I'll just type it out below.

Banana Quinoa Waffles
1/2 cup water
1/4 cup quinoa
1 2/3 cups whole wheat flour
2 tbsp packed brown sugar
1 tsp baking powder
1/4 tsp salt
1 cup mashed banana
3 eggs, separated
3 tbsp unsalted butter, melted
1 1/2 cups whole milk

real maple syrup
berries, optional

-In a small saucepan, bring water to a boil.  Stir in quinoa.  Reduce heat; cover, and simmer for 10-12 minutes or until tender and liquid is absorbed.  Remove from heat.  Transfer to a small bowl and chill 1-2 hours or overnight.
Preheat waffle iron.  In a large bowl, combine dry ingredients.  In a medium bowl, combine quinoa, banana, egg yolks, butter and milk.  Stir in flour mixture.
In another bowl, beat egg whites until stiff.  Fold them into batter.  Cook batter in waffle iron and top with syrup and berries.

Also on the menu this week:

Cilantro Chicken Lime Soup from Pinterest.  (Like tortilla soup.)

I made a rhubarb pie again for my coworkers birthday.  Same as last year.  And it is sooooo good.  There are just things you look forward to with each season and spring includes rhubarb!

Chicken Tikka Masala also from Pinterest.  Currently one of my very favorite recipes.  So easy to make... looks fancy... tastes incredible!
We rounded out our week with hamburgers on the grill.
