Marshmallow-Laced Hot Fudge

Are you in the mood for a little indulgence?

How about hot fudge sundaes made with homemade Marshmallow-Laced Hot Fudge?

I spotted this in Bon Appetit recently and it sounded sooooo good and sooooo easy. I actually had everything I needed except for the marshmallow creme, so I just added that to the grocery list.

Side note: Craig's been doing nearly ALL the grocery shopping for the last month and a half. I make the lists based on my menu plans (the list is broken down into specific categories to make shopping easier for him) and he adds anything extra he needs. It has been such a welcome change to have this task off my hands! I usually get bath and bedtime duty on my own when he shops but it's totally worth the trade off.

Anyway, this was a delicious evening treat that Craig and I enjoyed after the kids' bedtime while watching a movie. Does anyone else do that? I mean, the kids get dessert too, but Craig and I often wait till they go to bed to take a load off and finally relax with our desserts. :) We've also been borrowing LOTS of movies from the library in the last few weeks. We have our name on several waiting lists for newer releases, but we've enjoyed a bunch of new-to-us movies free of cost.

Anyway, this was so easy to make really quickly. I just dumped a bag of semisweet chips in a bowl and topped it with a teaspoon of cocoa powder and a half teaspoon of instant espresso powder. Then I brought 1 cup + 2 tablespoons of heavy cream to a simmer on the stove top, poured it over the chocolate, let it sit for 30 seconds and stirred it all together. Finally, I folded in 6 tablespoons of marshmallow creme to give it that glossy, fudgy taste and that's it!

We drizzled some over vanilla ice cream while still warm, but you can store all the leftovers in the fridge and reheat before serving later.

Craig topped his with raspberries and I topped mine with peanuts. Delicious!!

I highly recommend trying this. ;)
