This was one of those weeks where it was soooo helpful to have all my meals prepped in advance. I have had so much on my to-do list lately on top of the normal evening routine with the kids, so having dinner ready to bake/simmer/stir-fry when I walk in the door is such a help. We had a surprise birthday party to go to last Friday for one of our friends' 40th birthdays, so all of my meal prep was done on Saturday evening instead.
Here's what was on our menu this week:
{P.S. - all of these recipes are back in my archives... somewhere. ;)}
1) Mom's Italian Vegetable Soup with grilled cheese
(from one of her recipe books - not sure what it's called)
Kids' dishes: Sophie's is the green, Will's is the orange bowl and the plate. They ate very well!
I've been packing vegetable soup with cheese slices and fruit for lunch all week! 2) Sweet 'n Sour Pork Stir-Fry (originally from a Cooking Light cookbook)
Our plates: Craig's is back left (dished out before the zucchini was added), mine is back right, Will and Sophie are in the front. Sophie did excellent with this dinner... Will just picked at the stir fry. (this is an old picture - we had green beans & grapes instead)
Plus, Will and I baked oatmeal chocolate chip cookies again and I made the lemon sour cream pancakes for the 3rd week in a row last Saturday.
Oh, and here is a delicious new treat I discovered while looking for regular yogurt raisins for putting in Easter eggs for our egg hunt. These babies are at my desk at work. ;)
