What's For Dinner? June Week 1

First, here's a shot of the chicken tortilla soup from last week:
Julie, you said you were planning to try this. I promise you won't be disappointed. It's SOOOOO good! I give it 4 stars.

I've been trying some new things with Sophie lately in an attempt to broaden her palette. As usual, it's hit or miss with her:
1) apricots - miss
2) plain, unsalted, rice cakes (the large ones) - hit (but not a scarf-it-down kind of hit)
3) almond butter: on rice cakes - miss; on graham crackers - big hit (she's had other nuts ground or finely chopped into pancakes or baked goods so I knew she was okay with almonds; we haven't tried peanuts or peanut butter yet and I plan to hold off for awhile, but we NEED some other protein!)
4) brought back the black beans - hit
5) watermelon - she ate it... I don't know if it was a hit?

I would like to try peaches/nectarines again soon - they're on sale this week so maybe tomorrow? She loves lasagna! So that's cool. But this girl is eating cottage cheese and yogurt like they're going out of style. Her main fruit staples are banana, avocado and grapes - not much else. And vegetables: I feel like I just keep repeating zucchini with summer squash (steamed, diced), peas and carrots, or winter squash and sweet potato.

Okay, onto this week's meals. We've been quite the social butterflies lately so I only planned two official family meals and the rest of the time have been outings and parties.
1) Last Friday we went out with Taylor and Amanda for dinner and a movie. Blue Pacific Grill gets an A... Prince of Persia gets an A... Jake Gyllenhaal gets an A++! ;)
2) Saturday we had friends over and grilled out: burgers, summer salads, sweet corn, brownies. Yum.
3) Sunday was the twins' birthday party: lasagna, salad, fruit, cake pops!
4) Monday was Memorial Day and a picnic at the Zeller's: potluck as usual - I took a Mexican corn salad.
5) Tuesday we swam at my parents house in the evening and ate up leftover lasagna from the party.
6) Okay, here's the first meal I made: homemade pizza. I wanted to try it out before Will's birthday party this weekend since that's what we're serving. I made a homemade yeast crust using half white and half whole wheat flour. I thought it was good, but I think for the party I'll just do all white - it'll go over better with the finicky crowd. I love this pastry mat from Tupperware: My mom got it for my wedding shower and it's so cool! This was also my first time using a rapid-rise yeast. I've done the longer-rising, active dry yeast plenty of times, but this was done in like 10-15 minutes. The recipe makes two crusts so I made two pizzas. Here's one. For the other I used my Pampered Chef stone. Both baked equally fine - neither better than the other.
On the left: green pepper, red onion, mushroom, pepperoni. On the right: "Hawaiian" with ham, pepperoni and pineapple (Craig's fave).

Soph with pizza sauce on her nose. I bought Meijer naturals sauce with no artificials and no high fructose corn syrup.
7) Thursday evening will be grilled lime chicken with avocado and tomato salsa. It's that recipe I linked to that Kelly made when we had dinner together recently. The salsa has: avocado, tomato, cucumber, cilantro, jalapeno, red onion, and lime. And the chicken is marinating in lime, olive oil and garlic powder.
8) Friday is the homecoming parade in town so I'll probably pack a simple, picnic dinner and get ice cream at The Dip afterwards.
9) Saturday is our friend Julie's birthday and we're going to check out that new BD's Mongolian BBQ for dinner.
10) And Sunday is Will's 3rd birthday party and we're making the homemade pizza again!
Busy, busy!
