A couple points from last week:
1) The tomato soup was fantastic! Really good flavor. Next time, I may hold some of the diced tomatoes out until after the rest is pureed to get that chunky texture I like. But overall, wonderful. Craig really liked it too. Will dipped his sandwich a few times, but that's it. So far, the only soup he'll eat well is chicken noodle.
2) Unexpectedly, Meijer had peaches available out of season last week. They were a little soft but that actually worked well for Sophie. So she tried peaches mixed with pears last week in addition to the steamed, tiny broccoli pieces.
This past weekend, we had the game night and Super Bowl food for Saturday and Sunday. And then Wednesday, we're planning to go out to dinner for my brother in law's birthday. So I only have 2 meals planned for this week:
1) French onion soup - I've obviously been on a soup kick lately and a co-worker told me that this recipe (http://www.foodnetwork.com/recipes/tyler-florence/french-onion-soup-recipe2/index.html) is oh-so-good. It's Tyler's recipe again so I'm pretty much guaranteed to like it. I've never made French onion soup before but it wasn't difficult at all - just a little time-consuming. I made it last night and plan to serve it tonight with a whole grain baguette and sliced provolone instead of Gruyere (provolone is more readily available at regular grocery stores).
2) Spicy chicken sandwiches with cilantro lime mayo - Mmm! A yummy favorite of mine from Cooking Light magazine: http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1860085. I'm not normally a mayonnaise fan unless it's on BLT's, but this dressed up mayo is the best part of the recipe. I imagine it would be good on a Mexi-style burger as well, maybe with some avocado slices or guacamole. Crushed corn chips coat the pan-fried chicken cutlets and then I love the raw, red onion and lettuce to go with.
Sophie may have a bi-week on trying new foods this week. :) She's already got plenty of choices and I have a couple other unusual food things I have to prepare this week. I may make her some homemade "teething biscuits" from that wholesome baby food website I love.
Oats & 'naner drops:
1 c quick oats
1 c ground oats (grind oats and make a coarse oat flour)
1/4 t salt
1/4 t cinnamon or ginger or cardamom
1/4 t nutmeg
1 t baking powder
1 c (~2) overripe bananas, mashed
1 t vanilla extract
3 T oil of choice
Directions:
Mix dry, mix wet, add wet to dry. :) Drop by the spoonful onto parchment paper or greased baking sheet. Bake 12-15 min at 350.
Will liked these when he was a baby. They're basically just healthy, baby "cookies".
The other things I have to prepare this week are:
1) A birthday cake for a co-worker tomorrow - we draw names to bring birthday treats for each other in our small office. She requested red velvet with cream cheese frosting and I've never made that before so wish me luck!
2) A Valentine treat for the kids to take to the sitters on Thursday or Friday. I may just double it and bring some to work on Friday too.
And then lastly, I'm thinking about what kind of Valentine's Day dinner I'd like to cook for my family. Craig and I are thinking about seeing a movie during the day and just dining in with the kids in the evening. Hmm... I know I want chocolate covered strawberries for dessert. But that's all the further I've gotten. :)
