1. Saturday was really the first day that I saw an improvement in Will's appetite... and it started with carrot pancakes. These are definitely a favorite in our house and I was soooo relieved to see him eat a good breakfast. We had yogurt and bananas alongside.
We swung by my mom's after our trip to the library and she fed us lunch... on her birthday. Wow, thanks mom, but that seems a little backwards! ;) And I even had leftover shrimp fettuccine!! Yum!For dinner, I made Craig's favorite: taco salads. Easy peasy.
My mom gave me the cutest, little butternut squash last week that was just perfect for making a small batch of pumpkin pie-sicles. {This picture is old - my little squash was less than half the size of this one.}
The kids love these too and each pop delivers approximately 1/3 cup of vitamin A packed squash. I'm just happy to have some healthy go-to recipes when they're not feeling good.
2. Sunday we had leftover pancakes for breakfast... I don't remember lunch... and in the evening, we went out with my mom's extended family for dinner at a famous rib & chicken place in New Reagal, Ohio (sp?).3) Monday's dinner was another favorite of Craig's: Italian Stuffed Shells with green salads and fresh fruit. Everyone ate these very well! Craig had five shells, I think? And Sophie inhaled one or two of them with excellent fork use. Will took a little coaxing but he ate well too. And dessert was the pumpkin pie-sicles.
4) Tuesday is a school day for Will and we were out of carrot pancakes, so I made up the batter for whole wheat oat pancakes on Monday night and made these up on Tuesday morning.
My favorite way to eat these (especially when I'm on the go) is to take two small pancakes and sandwich them together with a little natural peanut butter between them. Paired with milk and a clementine or banana, I have myself a hearty breakfast!
School lunches this week were extremely simple and uncreative. I was still treading lightly with Will's timid appetite and didn't really plan anything interesting in advance. So he had: cantaloupe chunks and apple slices, slice bell peppers and carrot sticks, and his standard mix of peanuts, dried cranberries/raisins and pretzel sticks.

6) Thursday is grocery shopping night so dinner will be another simple one. I'm planning big salads with sauteed chicken strips, white beans, veggies and a homemade balsamic Dijon dressing.

Question for you: Are you eating differently after the new year? Do you and your family have any new food goals?

I have several, but I'll share those with you in another post.
Happy eating, friends!

And, I've been meaning to share a super yummy and realitively healthy pancake recipe with you as well. Not that you need another, but you never know! :) It's a lemon, sour cream, banana pancake. Serve with the buttermilk syrup, or whatever you like and oh so yummy!
I'll do it soon. I promise!
