So here's what's been on our menu this week:
1. Saturday - Another batch of chicken salad for multiple days worth of lunches. This just tastes so good to me on bread or crackers with sliced cheese.

For dinner - scalloped potatoes and ham - recipe from Julie/Cathy. Comfort food to the max! Casseroles are one of my favorite parts about cold weather months. But this one unfortunately cannot be made ahead. I've tried it twice and both times the potatoes turned an unappetizing gray (even in the sauce) before it was time to bake. So I've resorted to preparing this only on a weekend day where I can prep and bake on the same day. I served it with steamed broccoli, bread and butter.

For dessert - Aunt Cathy's chocolate chip cookies... a batch for Molly and a batch for us.
2. Sunday - Breakfast with Mya & Stella. What else? Carrot pancakes of course, along with some yogurt and bananas. They are a huge favorite at our house but the twins weren't interested. :) And I think after several weeks in a row, we may be ready to branch out and hunt for a new pancake recipe, just to get a little variety.

Will and I are excited to go to the Farmer's Market Saturday morning and rake in all the end of summer bounty. We have several veggie-filled meals on the menu for next week.

Monday - BLT's with raw veggies on the side.
4. Tuesday - Ginger Chicken Kebabs on the grill - pineapple and bell peppers skewered between chicken chunks that were marinated in ginger, cilantro, cumin, garlic, etc. Craig hated it. Will and Sophie thought it was just okay. I loved it!

5. Wednesday - Homemade pizza. I made the crust with half whole wheat and half white flour. And then I topped them with ham and pineapple on one and pepperoni and banana peppers on the other. Yum. But guess what... now Will is anti-pizza lately. He used to love English muffin pizzas as a last minute, go-to lunch and now he says "no" when we offer them. He took two bites of this pizza and then just ate his fruit and veggie sides. Sophie loved it though.

Oh, and look closely. You'll see a little sneak peek at our dining room makeover. This is still undecorated, and our table is out in the garage being worked on, so we're eating at a card table this week. And, yes, Craig and I were hypocrites this night drinking root beer (me) and Coke (him) while the kids got milk. I only ever do this with pizza and, shockingly, Will never asks or requests something different! What a nice boy to let me get away with not practicing what I preach for a night. I promise it's rare. :)

6. Thursday - leftovers.
7. Friday - burgers on the grill and "Bob's Salad": tomato, green pepper, red onion, garlic vinaigrette dressing.

Another fave at our house, and I usually throw the dried cranberries in.
Can't wait for the big reveal!
