What's For Dinner? May Week 1

{April 28 - May 4}

Sunday, April 29th:  Casey's birthday dinner at my parent's house.
Tried a couple more Many Makings recipes this week!  I hadn't been getting updates from them in awhile but I popped over recently and they have made some really nice changes to the layout and look of their blog.  Very impressive, ladies!  It's super easy to navigate and I love the new header!
The first was Chicken Enchiladas, which received rave reviews from Craig!  YAY!  He said he prefers this far more than the usual beef and bean baked chimichangas I usually make, but Craig is a sauce guy and this enchilada dish definitely fulfills his love for "sauce".  I prepared this on Sunday and served it on Monday after karate with a veggie and fruit on the side.

On Monday, Wednesday and Friday, the kids eat breakfast at home.  Those are school days for Will, so he needs to eat before arriving at the sitter's house and I just feed Sophie too because it makes more sense with timing.  On Wedneday this week, Will and I went on that Kindergarten field trip so I drove him to school and we had a little extra time in the morning.  I made Weelicious carrot pancakes for breakfast and we were able to eat a little more leisurely.
Because I was able to stop home in the middle of the day on Wednesday, it was also a perfect day to do a crock pot meal because I could put it on around mid day and let it cook all afternoon.  I made a roast with carrots and potatoes and used a lemon, herb and garlic Lipton soup packet.  We had applesauce, bread & butter and a green vegetable on the side.
Ohhhh, this was so good!
On Friday, I tried another delicious new recipe from Many Makings:  Baked Coconut Chicken Strips with Sweet & Spicy Apricot Dipping Sauce.  YUMMMM!!!  I LOVED the flavor combinations in this dish!
Just a simple green salad on the side for all of us and the kids had some strawberries too.

This was a really tasty week!  The kids ate pretty well too even though they're always a little bit picky with the main dish.

Yay! Glad you like the new site and the recipes! I actually just made the enchiladas and coconut chicken within the last couple of weeks, too! Two of my favs! :)
