What's For Dinner? Nov Week 1

After our 70+ degree day on Friday, I was inspired to have a summer veggie baked pasta dish tonight. I found the recipe in a Williams Sonoma catalog at the end of summer:

Mmm! Mmm! Good!

Also made some homemade salsa again this weekend with the Roma tomatoes on sale last week. Note to self: do not skip the garlic even if baby wakes up just before finishing the recipe. Garlic is KEY! Will add tonight before serving with dinner this week.

On the menu this week is:
-taco salad (I have to fulfill Craig's bi-weekly need for the same-old-same-old), and salsa
-homemade tomato soup (found the recipe in Toddler Mag - a great new publication that's showing up in the waiting areas at my work - can't seem to find the recipe online though), probably with a grilled cheese, which is a family favorite in our house
-butternut squash apple mini muffins (another Toddler Mag find):

I go in spurts of being a huge fan of Food Network TV and not finding the time to actually watch it. So another big resource I love is magazines. I stopped my subscription to Cooking Light before Sophie was born because I didn't anticipate much time for gourmet food. But I will renew again soon and, in the mean time, I find lots of great kid-friendly stuff in various parenting publications.
