What's for dinner? Week 2

Well, first of all, the tomato soup recipe last week was a bust. Not doing that again! Blech! It had white beans in it and parsley and green pepper and the whole thing was blended. It tasted way too 'beany'.

On Saturday we took a sausage, egg and cheese brunch casserole over to Wes & Casey's to spend some time with Mya & Stella. So dinner was light that evening.

Then Sunday Supper was one of my favorites: chicken bacon roulades. You need an evening like Sunday with a little more leisure time to put this together. It's not super quick, but it's worth every minute! Here's the link: http://www.epicurious.com/recipes/food/views/Chicken-Bacon-Roulades-15196. All hail to the fat gods! Do NOT make this if you're on a diet (wink, wink). But I'm breastfeeding and my appetite is insatiable right now, so I'm enjoying the extra calories. ;)

Banking on leftovers tonight.

Then also this week I've got "cheeseburger soup" ready. Our babysitter made this for us the week Will was having all his troubles in October and she graciously shared the recipe. It's rich and yummy and I just LOVE having good soup recipes on hand. They're so heart-warming in the fall and winter and they freeze well. I doubled the recipe and froze 3 portions.

I think after that, I'm going to use a freezer meal for Wednesday or Thursday - maybe Italian stuffed shells. That's a favorite of Craig's and a staple in the freezer. When I have to grocery shop on Thursdays, it's easiest if there's a meal ready to just pop in the oven.

New for Sophie this week: applesauce and avocado. Last week she enjoyed the squashes and pears, with a slight sour face for the pears. She's eating 2 solid food meals per day now - usually lunch and dinner - and up to about 3-4oz of food per meal!
