I have but one picture for this week's dinner post:
Before leaving for Florida, I made a batch of whole wheat waffles and froze them for Craig to pull out for breakfasts while I was gone.
I also made a double batch of chicken noodle soup - half for my sister in law and her family (a belated post-new-baby meal) - and half for Craig to simmer and add noodles for dinner as needed.
And finally, I left him a cabbage roll casserole for a weekend dinner meal.
So I made sure he was totally prepared, right? Right?...
He and the kids ate at his parents house for 3 of the 4 evenings I was away. Guess we know how daddy would handle single-parenthood, God forbid. They did eat the casserole on Saturday night and I guess it was nice to have the soup ready for dinner on Tuesday so I didn't have to cook. But still. I kinda' feel like I wasted my time preparing.
On Friday last week, we had a taco night. Very well received.
Oh, and I forgot to mention in one of these last two dinner posts that we tried Weelicious's Banana Waffles and those were very good too!
