This Week In Tot School...

It's been a bit of a slower week coming off of a busy and exhausting Easter weekend. But we still did some fun stuff that I wanted to share. Lots of sensory stuff and just being outdoors as much as possible. Besides the activities you see in the pictures, we also spent a lot of time inspecting the creatures that have shown up outside, i.e. the huge spiders and webs outside our windows and between the deck spindles, or the giant worms in our driveway after the rain. Gross, I know. But Will gets so fascinated by them all!

Sophie seems to at least be interested (and not appalled) by the feeling of grass on her bare skin, contrary to her brother at this age.
She did, however, switch to crawling up on her hands and knees (as opposed to her normal army crawl) when on the grass.
Or... she may do one of these walking/crawling numbers where she's still technically on all fours but with the least possible amount of skin on the grass. :)
Will was pretty intrigued by the robin on our deck one morning too.
Our Practical Life lesson this week was putting on and taking off a shirt. Daddy helped Will practice with jammies at night.

Thanks for your help, dad!
I picked up a 10-well painter's palette for like a dollar at Hobby Lobby and showed Will how to pattern some pom poms around the circle using the tongs.
Not the best picture of either of them, but it's the only action shot I took of this. Craig holds Will's hand so he remembers not to attempt using tongs with two hands. It messes him up.
This looks pretty basic and pointless, but it takes a lot of precision to balance several of these "floral stone" pebbles on each colored craft stick without bumping others off. Craig showed Will how to hold the stones like a disc with only pointer finger and thumb on either side for the easiest placement.

Then, Will could flip the sticks over where I numbered them 1-4 and put appropriate numbers of dots on each for him to count the stones.
On that beautiful (but a little windy), 80 degree Tuesday we had, we went outside and did some water play using an empty grapefruit juice bottle, a funnel and a small pitcher.

We made our first attempt at incorporating a turkey baster with our water play... and it was mostly unsuccessful. He just doesn't get it yet. But we'll keep trying.
He really enjoyed Sophie's pinwheel on this windy day!
And both Nana and Aunt Casey gave him some grow capsules that drop into warm water and expand into vehicles and bugs and stuff.
You'll notice he's wearing his boots in all of the above pictures. They have been worn almost daily at one time or another. :)

On Wednesday evening, we sat out on the porch and watched the storm. Very cool. I have always loved storms.
Really blurry, but cute of Will and Bru before his appointment with the groomer on Thursday.
Also on Wednesday we did some fun sensory play. I purchased a canister of salt (for like 44 cents, I think) and dumped enough into a pan to make a thin layer. Will swirled his hands in it, "drew letters and shapes" with his fingertip, and sifted it through his fingers.

More practice with taking off his shirt.
Poor kid. A big head is a real disadvantage sometimes. Hehe.
Next, I put him in some swim trunks and set him up in our bath tub with a cheapo can of shaving cream ($1.19). He had a bit of a hard time squirting it, and at first acted disgusted to get it on his hands. But soon he was loving this experience.

Will used a plastic shovel for scooping and spreading too. We only ended up using about a third of the can of shaving cream so we can definitely do this again! It was super easy clean up and he got a bath right there after we rinsed him and the tub down.
One evening as I was cleaning up toys, I found this line up of his barrel of monkeys. Nice job of number sequencing, Will!
I also want to add in this post that the majority of the work we do come from ideas I find on other Tot School blogs. The "homepage" for Tot School link-ups is: lapbooksbycarisa.homestead.com. Lots of moms do this stuff and there are sooooo many good ideas for learning activities out there. I have actually gotten creative and come up with some of my own activities, but I choose not to link up because I still prefer to keep my blog mostly private.
This is another cool (and pretty much free!) idea I found. Craig picked up two each of several colors of paint samples. I already had a whole package of clothes pins laying around, so this activity was essentially free. I cut up one of the color strips and glued them onto the clothes pins. Then Will had to match each of the colored clothes pins to the correct color on the opposite color strip. So this goes a little beyond knowing colors - now he's learning to differentiate varying shades of the same color. We talked about light and dark colors.
I actually left him to do this independently while I cleaned up dinner dishes and he did pretty well. I see he flip-flopped two of the greens, but otherwise perfect! I also have swatches of purples, blues, and I think browns to cut up now for the future.
Aunt Casey and Uncle Dub got Will a couple really cool games for Christmas that have actually been waiting in the wings of his closet for when he's old enough. You can always count on the teachers to get him something educational. I love it! This is a match-the-rhyme card game with picture and word cards that link together like puzzle pieces. He loves it!

On Saturday morning, the kids and I got back out on the porch for what has always been a ritual for Will and me. Ever since he was a baby, I would sit out there with Will on weekend mornings and often on weekday evenings as long as the weather was tolerable. We would cuddle with a blanket if necessary and just watch the cars go by or sing or talk or listen to the birds. I've done it with both kids a few times, but only now is getting to be easier to keep Will seated calmly and Sophie happy in my lap at the same time. It makes me think of my Grandma Skees because she always did this with us at her house when we were kids. We'd either play a guessing game about which color car would pass by next or we'd stand in the yard and play "Mother May I?" as we stepped towards her on the front steps. So anyway, in honor of Grandma, Will and I now often play the car guessing game and he loves it. Also since our paint sample game, he now makes guesses like "light blue" or "dark red". :)
Wearing the boots again.
Me & Soph.
When Sophie layed down for a nap, Will and I went upstairs to wake daddy and bring him a bowl of cereal in bed. We all hung out upstairs and vegged for a bit. Will wanted to play hide and seek. Can you spot him? This is actually one of his better hiding spots. :)
More practice with putting on a shirt. Sorry, some of these are dark.

More issues with his big dome. :)

Check out his proud face. Love it!
Next, Will helped ME figure out how to put on MY t-shirt (over my tank top). Please excuse how terrible I look in all of these. It was still early on a Saturday morning and my expressions look so ridiculous. But he thought this was great fun.

After he got it over my head, I made a lot of exaggerated silly guesses as to how I should get my arms through. I kept doing it the wrong way and he'd laugh and tell me no and show me where it was supposed to go.
Oops! My arm shouldn't come up through the neck! (He actually does this a lot on accident.)
Pulling it down.
Hooray! We did it!

With that mission accomplished, we go to the jar to pick out our next Practical Life lesson for next week: making the bed. Hmm... that may be a tricky one... but we'll keep it simple. Stay tuned next week!
Another size sorting game using three sizes of pom poms. Will LOVES "fuzzy balls" and now he even remembers the word "medium". He kept stumbling over that word last time.

Later in the morning, we made color collages using clippings from old magazines and catalogs. Family Fun, kids clothing catalogs, and Crate & Barrel were all good ones for finding pictures. We sorted them by the rainbow (plus pink) and glued them down. We still have room to add to the pages later, but I might like to laminate them to use when teaching Sophie her colors in the future. And it serves as a fun, homemade I Spy page for Will. Today though, he had fun sorting by color and glueing. Oh, and yes I realize my son is wearing a helmet in these next couple. I couldn't help it. I simply mentioned the possibility of taking the bike trailer out for a ride this weekend and he immediately wanted to put on his helmet... and wear it around. He likes to clip the chin strap himself.
My kid is... special.
Here are our collages for the time being.
When Sophie woke up, we went back outside for a nature hunt and to enjoy the sunshine before lunch.
We brought out two empty shoe boxes and talked about filling one with smooth things and one with scratchy/rough things. And then we hunted around for each of those categories in our yard.
Sticks and mulch.
Inspecting a blade of grass.
We have a buckeye tree (Ohio's State tree!) in our front yard and Will decided that the buckeye was smooth but the shell was scratchy and rough.
Pine cones and rocks were added.
Sophie checked out the grass some more from the blanket.
She always sits like this or in the hurdle position. It cracks me up.
And a final picture for the week: Sophie signing "all done". It's so cute when she does it.
So that was our week! I'm hoping to actually consolidate my thoughts and ideas into one main topic (the alphabet!) for next week. We'll see how that goes. I have notes jotted but nothing actually organized yet. I keep a notebook of ideas as I find them or think of them so that helps to give me a starting point each week. But it definitely takes some brief prep work to assemble the supplies/trays ahead of time. Doing so as the child waits in front of you is NOT a good idea. Will would get impatient or I wouldn't have time after work to get stuff together in our tight time frame. So I usually do it at night after the kids are in bed or just wing it as needed, i.e. the shoe boxes outside this weekend was a last minute "hey, how about this?" sort of plan.

Will-isms Part 5

Here we go again! :)

1) (Feb) Will is coming up from the basement carrying his toy drum.
Me: "Really, buddy? Why did you feel the need to bring that up now?" (We have dinner guests.)
Will: "I'm going to take it into the living room so I can show everyone how to drum."
Logical enough I guess...
2) (Mar) Getting ready to go for a walk with the wagon. (It's sunny and beautiful out today!) Will asks "Is doggy going for a walk too?" I say "I don't know. Why don't you ask him?" So he goes to squat down beside Brutus and asks "Do you want to go for a walk, Brutus?... Yes?..." Then he turns to me and says "he does." Apparently Will can interpret dog language now and has elected himself as Brutus's personal representative. (By the way, Brutus made absolutely no response to the question. :)) Later on our walk with Will & Brutus both sitting in the wagon (Sophie was in the carrier), I hear him ask Brutus "Are you cold, Brutus?... No?" And then to me: "He's warm, mommy." And a few seconds later: "Do you think it's bumpy, Brutus?... Yes?..." And to me: "It's bumpy, mommy." LOL
On our walk we pass a friends house (a friend of my parents - Will doesn't know her well). She's outside and calls "hello" to us. I say hello back and Will asks "Who's that, mommy?" I say "That's Jean. Why don't you say hello to her?" He calls out "Hi Jean! I have a magazine Jean!" (He's carrying one of his beloved catalogs.) A little further down the road he says "Mommy, I like Jean."
We walk in the neighborhood so there's not a lot of traffic. But whenever a car goes by, Will tells me "Whoa! That was close!" So I use this opportunity to talk about traffic safety, staying away from the road and looking both ways.
3) (Mar) I go in to put Will back in bed after I find him laying on the floor by his door at night. I'm kind of OCD about his blankets being straight and folded just so when I tuck him in. So I walk around to the other side to straighten the covers and Will says "I like you, mommy." Sometimes that's a special change of pace from "love". I say "I like you too, Will. You're my favorite boy in the whole world."
4) (Mar) Will has gotten much better at using his manners. He says please much more frequently and, if he forgets, I simply say "that's not how you ask, buddy" and he'll rephrase it to "can I..." or "may I...yada, yada, yada... please?" Just this week, he has really improved his "you're welcome" usage and frequency too. It makes me smile when he responds "you're welcome, mommy" to my "thank you".
5) (Mar) At Lisa's house, Will comes up to Lisa to say "Charli hit William Dean Riedeman... but he's okay." I guess he speaks in the third person now? Craig says that means he's going to be a wide receiver. :)
6) (Mar) Another night of picking Will up off the floor and putting him back in bed. I kiss him and tell him I love him and he says "You're the nicest lady in the whole world, mommy."
7) (Mar) "I want to go to Great Grandma's house on Sunday." (Why Sunday? I don't know.)
8) (Mar) At bedtime, daddy asks Will "how many kisses do you want from daddy?" Will says "3". (That's their routine: 1 on each cheek and 1 on the forehead.) Then daddy asks "how many kisses do you want from mommy?" Will says "21"! I normally do a silly combo of eskimo, fish and butterfly kisses... but this time I followed Craig's lead and did 7 on each cheek and 7 on his forehead. Will was very pleased with this as proven by his cheesy grin.
9) (Mar) Will and I are reading Brown Bear, Brown Bear and I am encouraging him to fill in the parts he knows (which is most of it). When he stumbles, I fill in and then he finishes. Once when he paused, he was apparently just feeling thoughtful and said to me "don't talk for a little bit, okay mommy?" Then he "read" a little bit more and said "okay, now you can talk, mommy." :)
10) (Mar) Playing with his matchbox cars, Will says to me "thank you for the cars that daddy bought at the store, mommy... he's a really nice guy." Not sure why I received the thank you, but I made sure to pass it along to Craig. :)
11) (Mar) In the bath tub, Will and I are discussing his three bath tub trains that squirt water from their smokestacks (very fun). He has a blue one (Thomas), a green one (Percy) and a red one (Salty). He tells me "The red train is Salty, not James, mommy". (James is Will's favorite and both James and Salty are red.) I say "Oh really? How do you know? How can you tell them apart?" He said "James has a circle head". (He means "face".) I picked up Salty and noted his square face. I was floored! Did he really just make that differentiation? I kept saying "Wow, buddy! You're right!" And we talked about Thomas and Percy's round faces too. I later found out that Craig is the one that pointed out the round vs square faces to Will as a way to tell them apart. So, okay, Will didn't come up with that on his own... but he remembered it! Way to go, daddy, for teaching him to notice details!
12) (Mar) Will has started using the word "actually" and it's so funny because he sounds so mature. At lunch today, he was discussing hippos and rhinos and elephants and inquiring about where they live. I said we'd need to make a trip to the zoo soon and read about it. He was telling me that rhinos like to walk in the tall grass (do they?) and that "actually, giraffe live in the tall grass too!" It was so cute and funny to hear him make that transition with such a big word. Another time, after reading our standard two books at bedtime, I say "okay, it's time to say our prayers!" Will replies "Actually, we need to read the ant book first". (The Ants Go Marching) He cracks me up with this "actually" word!
13) (Mar) I'm feeling frustrated because Will woke up from nap after just an hour (his norm is usually two hours) and I didn't get much quiet time to myself. I immediately take him to the potty so we can switch back to underwear for the afternoon. (He's doing really great with this!) So we're both sitting in the bathroom waiting for him to pee and I'm telling him I really wished he would have slept longer today.
Will: (interrupting me cheerfully) "Listen mommy! I can hear my pee!"
Me: "I hear it too, buddy! I'm so proud of you!"
Will: "Thank you, mommy." (He is unfaltering with his manners these days.)
Then, after washing hands, getting underwear on and sticker on the chart, we walk out and he tells me "Remember... shhh! Sophie's still sleeping, mommy!" How can I be frustrated with this kid? He's being sweet as pie. He doesn't deserve my attitude, so I'll change it. At least I'm giving up free time to be with the cutest, little stinker on the planet.
14) (Mar) Craig's working out in the basement tonight and Will wants to go down to watch. He observes the P90X workout Craig is doing and says "You're really strong at push ups, daddy... You're so strong!... You're really strong and pull ups, daddy." Ha - I'm sure Craig was flattered to be admired by his boy. Craig's been jokingly showing Will how to do sit ups, push ups and leg press recently.
15) (Mar) Will's been allowed to watch and episode of Nick Jr TV tonight after bath. After I get Sophie to bed, I walk out as a new shoe (Backyardigans?) is starting. I say "Okay, buddy, time to turn it off. I want to play a new game with you before we read our bedtime books." Will says "No, mommy, you need to pause it!" Is it sad that this new generation of children is aware of the fact that it's possible to pause life TV??
16) (Feb/Mar?) Will is super interested in Lightning McQueen from the Cars movie today. He just keeps saying it, singing it and carrying around the toy. The funny part is how he says it... It keeps coming out "Light-mon Na-clean" or just "Light Ma-clean". Haha!
17) (Mar) Will's latest slogan (and response any time I question him about why he did something wrong) is "Because I did"... i.e.:
Me: "Why did you pee on the floor, Will?"
Will: "Because I did"
-or-
Me: "Why did you take all of Sophie's books off her shelf and leave them on the floor?"
Will: "Because I did"
Nice, huh? I don't think he's trying to be mouthy or rude, but it sure sounds like it!
18) (Mar) I love that Will makes connections between real life and something he's learned previously. For example, this morning, Will came upstairs while I was getting ready for work. We always have him sit on the potty first thing when he wakes up now. I was brushing my teeth so I said "Why don't you get your pants down and then I'll help you get on the potty?" He started to unbutton his jammy top so I said "No, buddy, you can leave the top on. Just pull off the bottoms." He looked at me thoughtfully and said "that's from Pajama Time, mommy?" At first I didn't know what he meant but then remembered the line from the Sandra Boynton book we've been reading: "Pull on the bottoms. Put on the top. We can all pajammy in whatever we've got. It's Pajama Time!" I praised his memory and praised him again after he peed on the potty. He told me he wanted to wear underwear so I asked him to go get them from his room. He did... along with the Pajama Time book. :) So we paused our morning routine to read it.
19) (Mar) "Hippty hippty hop, the mouse ran up the clock. The little dog laughed to see such a sight and the dish ran away with the spoon." LOL We're confusing nursery rhymes and Easter songs?
20) (Mar) While brushing his teeth before bed, Will pats his bottom and asks "Is this my butt, mommy?" I say "yes". He says "Daddy calls it my booty".
21) (Mar) Reading one of his favorite books "Down By the Station" (about a little train that collects all the baby animals at the zoo from their mommy and daddy and takes them to the children's zoo area), Will tells me that "the baby elephant is called a calf, just like a cow!" Again, making logical connections between things he knows. He's VERY good at all the baby animal names: calf, cub, joey, chick, foal, hatchling, etc.
22) (Mar) After he goes potty on Saturday mornings, Will occasionally gets to watch one episode of Dora while I feed Sophie and get breakfast ready. I'm reminding him of this by saying "we're only watching ONE Dora, okay?" He says "One episode, mommy?" Okay, so he knows the word episode AND he knows you can pause live TV... Sounds like a junky to me!
23) (Mar) Will has gotten pretty good at trying to redirect Sophie when she trys to play with one of his toys. He'll say something like "Come on, Sophie! (cheerfully) Let's go play with your music table!" Haha :) If that doesn't work, he'll say "No Sophie, go back to your room". And if that doesn't work, he'll tell me "Mommy, Sophie's tired. She wants to go to bed." LOL
24) (Mar) Getting diaper and jammies on for bed, Will says "Mommy, I have a hole in my butt!" I laughed pretty hard at that one and he didn't seem to get what was so funny.
25) (Mar) Craig is driving the kids over to Lisa's before work this morning. Will coughs a couple times and Craig asks him "What are you supposed to do when you cough? Where are you supposed to cough?" Will's response: "Supposed to cough in my elbow... not on the coffee table". Haha! Not sure where that came from or if he was really just making a cough/coffee connection. LOL
26) (Apr) Easter morning and Craig's calling Will to get dressed. Will is busy picking up some toys (a task I had just asked him to do) and tells this to Craig. Craig says to him "Why don't you come get dressed first and then you can finish picking up?" Will tells Craig again that he's going to pick up toys first and Craig says (a little more sternly) "No, you're going to get dressed first". In a very parent-like tone, Will says "Don't tell me no, daddy". :)
27) (Apr) At Great Grandma's house (for Easter), Will always enjoys playing with a little box of matchbox cars she keeps for the kids. One of the wheels falls off a car and Will is trying to put it back on. Papa is sitting beside him and asks "uh-oh, did it break buddy?" And Will says "Ya, Papa, I need a screwdriver". LOL
28) (Apr) Sophie's opening her basket from the Rethmans and Will simply can't sit back and watch. He's trying to grab some of her things and I tell him he needs to back up and let Sophie open her own basket because it's HER turn now. Will asks very sweetly "Can I share, mommy?" Haha! We've been talking a lot about sharing recently and usually it's in regards to Will's inability to share HIS toys with Sophie when she's interested in them. So it's funny that he thinks HE'S sharing HER belongings here.
29) (Apr) We removed Will's tie when he was going to eat a snack at Great Grandma's house. Then later when I wanted to take a picture, I handed Will his tie and asked him to please ask Nana if she would help him put it back on. Will took it to Nana and asked "Can you put my green scarf on, Nana?"
30) (Apr) Will has a little ritual of pointing to and spelling out the letters that say "Grand Cherokee" on the side of my Jeep before I load him into his car seat. He also likes to spell "Welcome" on the rug outside our porch. So as we were leaving grandma's on Easter, he spelled Grand Cherokee and then told me"This spells 'Welcome to our Car'!
31) (Apr) At dinner, Will had a rather unusual conversation with Craig:
Will: "You're a bad man, daddy." (He said it like 'baaaaad' as though he meant tough.)
Craig: "I'm a bad man?"
Will: "You're a dangerous man."
Craig: "Who told you that?"
Will: "Mommy."
I have never said anything of the sort. :)
32) (Apr) I'm getting dinner ready while Will works on a rhyming words game/puzzle. Each time he makes a match, he comes running into the kitchen and says "special delivery!", which comes out "special livery".

I also have one little Sophie-ism to report too... one of the first in her notebook. Upstairs one weekend morning after I finish nursing her and she's waiting for her daddy to pick her up to go downstairs. I won't name names (to protect the innocent) but somebody farted and, upon hearing it, Sophie immediately made a fart noise (like a raspberry) with her mouth! LOL :)

It's (Almost) Party Time!

Just 12 days till Sophia turns ONE! And just 16 days till her party! I'm so pleased with how many inexpensive, little details I've found to make this low-key soiree special for my little lady. With as much thought and research as I've put into this, you'd think it was going to be a large, blow-out affair. But alas, our gathering will be small... but special.

I've got a sort of naturey/owl theme going on with mostly blue and green colors, just like her bedroom is going to be one day. In fact, if you remember the Brooke bedding from PBK that we ordered (the quilt just recently arrived!), I kind of based everything around that. I googled "owl birthday parties" or "owl themed parties" and came up with a few random blog posts with some cute decorating ideas. Nothing over the top, but like I picked up these small, branchy, wreath-looking things from Hobby Lobby for like $1.50 each to set on the table at the base of a couple food bowls. I also found a pretty robin's-egg-blue vase there that I plan to stick some dried branches and maybe some pussy willow in for a naturey look. My boss offered to lend me a decorative bird cage to sit on top our wine rack in the dining room but I'm not sure I need that much. And also, those cute, little, owl dolls (Penny & Joy) that go with her bedding will be keeping watch over our guests from one corner of the buffet in the dining room.

Here are the invitations I found at personalizedpartyinvites.com:
They were super easy to order and arrived pretty quickly, printed on nice, quality card stock. I'm sure I paid considerably more for the ones we sent out at Will's 1st birthday. I know invitations aren't really necessary for small gatherings, but I think it makes them more special and I enjoy sending and receiving invitations. I even send invitations to my friends for our annual pajama brunch at Christmas time... even though they know it's coming every year. :)

Target had these Thank You's on clearance for about $1.50 or so and I picked up some shiny blue and green ribbon to put around some serving dishes and maybe vases?
I think I'm going to use all square-shaped serving dishes, so I found green, square plates too and blue napkins. Napkins from the Dollar Store and plates from Target.
The party starts at 4pm, so it's not quite dinner time and way too late for lunch. Therefore, our menu is going to consist of "substantial appetizers" and dessert. I'm planning a fruit and veggie platter, each with a dip, a veggie pizza, some cheese and crackers, a berry punch, bakery-made cupcakes (I'm keeping MY workload simple!) and then hopefully these cute, birds nest treats that I found on Family Fun: http://familyfun.go.com/recipes/hummingbird-nests-847672/. Casey is lending me some tiered serving trays for the desserts and I also have some Easter colored M&M's to put out in small dishes.

Remember that Etsy website I mentioned back in my Owl Crazy post? Well I also found a woman who makes custom, personalized cupcake picks! So I can just have the bakery frost them and maybe add some colored sugar flakes and then just poke one of these owl picks in. How cute are they?
I had to turn off the flash to get a close-up without washing them out.
I found these little favor bags at Target on clearance and I'm planning to stick one buttefly hairclip (also on clearance from Childrens Place - ~$1.50 for a set of two) inside along with those mini owl dolls I posted in my Owl Crazy post awhile back. Here's the lady that makes the mini owls: http://www.etsy.com/shop/aprilfoss?section_id=6316165. And the only other thing I'd like to purchase for the favors are small, bird-feeder treats that can hang in a tree. I thought that'd be a cute favor to go with our theme.
Depending on weather, Sophie's either going to wear her long-sleeved Easter dress with the tights (the colors go with the party decor) or a super cute dress my mom got her for Christmas from the Gap. It's a kelly green and blue floral print and short-sleeved. I searched Etsy for an owl hairclip and came up with this one, which I ordered: http://www.etsy.com/view_listing.php?listing_id=44110074. But I also have that one she wore for Easter as an option.
And lastly, I found this little gift bag at Meijer. I don't have anything to put in it yet, but it was too cute to pass up. :)
Okay, that's it! Now all I have to do is have my house clean and assemble the easy menu!
One more thing to share... Eventually we are planning to paint Sophie's room a blue and green (bottom half green, top half blue) and I was considering a non-permanent, non-damaging wall decal for decoration. Here is one I'm strongly interested in: http://www.landofnod.com/family.aspx?c=9676&f=4356

What's For Dinner? April Week 1

Eep! It's Wednesday night and still no dinner post! I almost didn't write one this week because I bought exactly one ingredient for this weeks meals (fresh sage) and I didn't do any meal prep. (I really didn't have the time last week/weekend.) But I have a couple recipes to share so here I am. This will be brief.

On the menu this week:
1) Sunday was Easter and a total gorging of delicious food made by other people!
2) Monday we had a few leftovers to eat up from previous days. I am a stickler for keeping an organized fridge. No leftovers left behind! Most everything has its place and if I open the fridge and can't see some free shelf space, I get all frazzled. Disorderly refridgerators are my pet peeve! LOL
3) Tuesday we pulled some cheeseburger soup from the deep freeze and served that along with some garlic bread, grapes and a steamed veggie.
4) Wednesday (tonight) was the day my one planned ingredient came into play. I had a package of frozen pumpkin ravioli (Meijer brand) and made a super simple (and delicious) brown butter sauce with chopped walnuts, sage, dried cranberries and freshly grated parmesan cheese. You can find the recipe here: http://www.foodnetwork.com/recipes/giada-de-laurentiis/butternut-squash-tortellini-with-brown-butter-sauce-recipe/index.html Giada shows you how to create tortellini using wonton wrappers. I've never tried that, but it sounds good! You can also just skip to the sauce part, which is what I did. Oh, and I didn't use that much butter. Craig literally had a tantrum the last time I prepared this, so for him and Will I cooked some frozen cheese tortellini with a regular marinara sauce. Everything came together very quickly. I also cut up and steamed some fresh broccoli plus a few extra veggies for the kids. Sophie's been eating with us on several occasions as well! Tonight she had some cooked and chopped raviolis without the sauce, chopped broccoli, peas, and diced tomatoes. It doesn't really go together but she didn't mind. She also had the tomato soup and grilled cheese recently. Our baby is growing up!

Someone once asked me if Will actually eats as much food as I put on his plate. As with most children his age, it's hit or miss. Depends on the day, his appetite, his mood, etc. But generally, he'll eat all the fruit or veggies put out, as well as any dairy product and just pick at the main dish. Lunches are pretty well accepted because they're pretty plain unless it's a leftover. Here is an example from tonights dinner. The before picture: And the after picture:
I'm packing the remaining raviolis for lunch on Thursday and Friday and saving Craig the ghastly heartache of seeing them on the table again.
5) Thursday is grocery shopping night so I'm pulling a second meal from the freezer: beef and bean "chimichangas". I'm not all that familiar with the difference between a burrito vs and enchilada vs a chimichanga... but this has a beef and bean filling, is baked (or could be fried but I choose not to), and we top it with stuff like cheese, salsa, lettuce, etc. So this will be a pop-in-the-oven and ready-to-go kind of meal and hopefully Sophie will like to try this too!
6) Friday and Saturday we have dinner plans with friends (I know! Check out our happening social calendar, huh?) so the kids will eat easy stuff that I can pull together like grilled cheese, English muffin pizzas, mini meatloaves that I keep frozen for when we're in a pinch.
7) I tried a new baking recipe this week and it is oh-SO-good!!! Homemade oreos! A co-worker shared an awesome new blog with me called Smitten Kitchen. I'm still in the early stages of stalking, but it looks both fabulous and right up my alley. My co-worker brought these to a work potluck last week and I decided I had to try them for my oreo-loving hubby and as part of a meal I plan to send over to the new Munoz family. Mine appear to be double stuffed - LOL. All the better!
Here's the recipe:
Makes 25 to 30 sandwich cookies
For the chocolate wafers:
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch process cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 to 1 1/2 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter
1 large egg
For the filling:
1/4 cup (1/2 stick) room-temperature, unsalted butter
1/4 cup vegetable shortening
2 cups sifted confectioners’ sugar
2 teaspoons vanilla extract
Set two racks in the middle of the oven. Preheat to 375°F.
In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.
Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately two inches apart. With moistened hands, slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. Set baking sheets on a rack to cool.
To make the cream, place butter and shortening in a mixing bowl, and at low speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.
To assemble the cookies, in a pastry bag with a 1/2 inch, round tip, pipe teaspoon-size blobs of cream into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream. Dunk generously in a large glass of milk.
I used just 1 cup of sugar to make them taste more like the original. And also I don't have a pastry bag so I attempted to use a quart-size, plastic bag and that just didn't work. The filling was too thick. So I just spread with a small knife. Mmm! They are soooo good!
Okay, that's it! Not sure how easily my meal prep will work for next week either since my Friday and Saturday nights are spoken for, but I'll see what I can do...
Have a good rest of the week!

The Rethman Brood

Ahhhh, my darling nieces... They're becoming quite the little ladies with lots of personality and loads of cuteness. Here's a few picture updates from Nana's house last Friday. All three girls received flower headbands in their Easter baskets, but Mya was the only one to leave it on for more than a few seconds.
Upon our arrival, Mya and Stella swarmed Sophie's car seat as though they had never seen one of these contraptions before!
Wee! It's so fun to climb inside and mess with the buckles!
Mya must inspect from a different angle - LOL.
Sophie and Stella kept crawling under the glass coffee table. Here, Wes meets Stella halfway.
Statue of Liberty!
Seriously, how great does my sister look? She is such a naturally awesome mother and I'm so proud of her.
Just another quick shout-out to the Rethman family: if ever there were two people truly meant to be parents, it is Wesley and Casey. This has been evident to me for a long time, but especially when I first became a mother. They gave so much of their time and love helping me learn my way as a parent and showing as much love to my son as they would their own. Will is such a lucky boy to have these awesome Godparents. I am constantly in awe of how easy they make it all seem! And though I'll never be able to do for them what they have done for me, I just feel very lucky to be a part of their lives. And to Missy Mya and Stella Belle: though I'm not half the auntie that your momma is, I love you tons and look forward to many, many sleepovers and birthday parties and playdates with you ladies!!!
